Maria, who still loves parties and dress-ups, is mum to 3 glorious girls and wife to a glorious husband. The family also includes 4 x chickens, 2 x dogs - Crickey (suffers deeply from small man syndrome and hates most people) and Rosie (an incredible Bull Arab - Australian pig hunter) and some fish.
When life presents seemingly insurmountable challenges, Maria likes to remind herself “even the shitty things that happen in life happen for a reason, sometimes it takes time, you just have to be open to realising what they are”.

Flynn Gillie
Flynn’s career in the hospitality industry has spanned 10 years in various roles and has been involved in distilling for 6 months. His speciality is bartending and his favourite Sin Gin is Wrath, with tonic water or as a Gimlet. Flynn delights in providing an enjoyable experience for guests, chatting and serving delicious drinks and putting smiles on their faces. He loves working with the team at Sin Gin and the amazing gin produced here.
Favourites: beef jerky, The Iron Giant, Band of Brothers (miniseries), Rolling Stones, Van Morrison, olive green (colour), Autumn-Winter. Idols: Theodore Roosevelt, Nimsdai Purja, Luke Richmond.
As an avid adventurer who loves to unwind by cycling along the coast at sunset to get a pint with a mate, Flynn has just returned from a cycling holiday. In his own words, here are the tales of his travels -
“I got back from Asia about a month ago, where I cycled from Ho Chi Mihn, Vietnam to Phuket, Thailand. The trip took me 9 weeks (including rest days and island days), approximately 1,700km, 2 full bike services, and many stories to share.
I met heaps of amazing people, had experiences I never thought possible, ate some amazing food, held a landmine detection rat and nearly died a few times (sorry mum!).
I have a tendency to embark on adventures with not enough preperation (Have hiked the Annapurna Circuit in Nepal twice, didn't train at all before either), but also have a tendency to know exactly who/what/when/where/why. I deliberately went into this cycling adventure without knowing a single thing other than what I’m doing for the first 2 days, which put me extremely out of my comfort zone, but changed me as a person.
The biggest take away I had, was a quote from a book/movie called Into The Wild, because I used to see myself as an introvert not needing human connection, but the periods of solitude while cycling reminded me of; Happiness only real when shared - Christopher McCandles (aka Alexander Supertramp).”

Tess, our General Manager, has spent a significant part of her career in hospitality and tourism. After graduating with a Bachelor’s Degree in Tourism & Hospitality Management she was always looking for new horizons and ways of personal development.
This year, despite a very busy schedule, Tess completed the inaugural Women in Tourism & Hospitality WA (WITH WA) mentorship program. She was able to share this amazing opportunity with other inspiring and like-minded women from different walks of life. The program was run over 6 monthly sessions, with guest speakers, activities and group discussions relating to personal and professional growth. These were guided by mentors with long careers and experiences within the Tourism and Hospitality industry.
With her toolkit of newfound skills, Tess is now looking forward to the positive impact this experience will have upon her personal and professional career goals. No doubt Sin Gin (the company and staff) will benefit from Tess’ learning and development. Another feather in her cap! Congratulations Tess!

What do you call a gin whiskey sour that's always late? A slow-aged sour!
INGREDIENTS
60ml Barrel Aged Greed
30ml Lemon juice
15ml Simple Syrup
3 dashes of bitters
15ml egg white or aquafaba
Method
-Give a good SHAKE to all ingredients with ice in your shaker.
-Discard the ice and strain back into your shaker.
-DRY SHAKE (without ice) and serve in a whiskey tumbler with ice, a slice of lemon & maraschino cherry.

Please don’t call our new lead distiller David.
Dave wasn’t a gin drinker until finding Sin Gin a few years back and falling in love with Wrath (true story). He enjoys a 2:1 of gin to tonic, and garnishes his Wrath G&T with a jalapeno for that extra spicy kick!
When it comes time to unwind you'll find Dave playing video games, eating chocolate and spending time with his gorgeous family, which incudes a rescue dog, and 2 snakes.

Why she loves having a distillery?
“It’s fun. It’s a great community. Being in this up and coming industry is a great adventure.
She’s also a passionate advocate for the industry as a whole:
I was the inaugural President of the WA Distillers Guild in 2019 and love working with the other distillery owners in WA to create and promote our industry.”
She’s very fond of a Wrath martini garnished with a Jalapeño, and she doesn’t do tonic.
Sin Gin’s History and Purpose
“Sin Gin’s purpose is to create great gins for good times. Mark, my lovely husband, and I started Sin Gin 6 years ago at The Murray Hotel and now it is one of the leading gin brands in WA.
The Murray Hotel was sold recently after I’d owned it for over 15 years so it was a very emotional goodbye.
I love Sin Gin for many reasons: the gin is fabulous, it’s fun to share our gin with customers and friends, the gin doesn’t go off (like food in restaurants) when we were shut due to pandemics, we could make as much as was needed and we have a fabulous team of staff.”
Fun Facts About Kate
When she’s not working on the Sin Gin brand, Kate likes to spend time walking, sailing, reading, painting, chatting with friends and drinking martinis.
You might not know Kate has a foster cat called Mishka who has gone viral on TikTok!
“Mishka is 17 and we took her in 5 years ago when the old lady she lived with had to go into a home, previously she’d lived with other people in our street. She belongs to the street.
We feed her every night, put her to bed and then let her out in the morning to spend her day at Piccolo’s Corner, the local café.”
Tom is our resident Freo Market Connoisseur and Sales extraordinaire.
He loves making connections and watching our company grow - with the intent of applying this learning to his own ventures in the future. He reckons our people and regulars are pretty awesome - that’s you, folks!
When he’s not slinging gin, Tom likes to relax with Charlie Brown, the 13 year old Cavoodle while watching the footy, and snacking on caramel covered cashews - with a gin of course!
His favourite Sin is Gluttony, but right now he’s into Sloth & Sonic - that’s Sloth with 80% soda & 20% tonic, garnished with lime and grapefruit. Delish!

To a champagne flute add a scoop of sorbet, lemon cordial and Sin Gin Lust and top (slowly) with Prosecco!

A gold medal was awarded to Greed for the second time, previously Greed had received a gold medal at the 2018 Australian Distilled Spirit Awards.
Greed is a gin for the juniper lovers, a classic London Dry style of gin with punchy, piney notes and hints of Green Cardamom and Coriander seed.

Created by distiller Matt Leach, this scurvy gin was originally released in 2021 as a micro-batch which picked up a gold medal at the 2021 Perth Royal Spirit awards!
Inspired By the ocean, this gin is salty, savoury & umami in flavour. In addition to your more standard gin botanicals Mutiny has Australian golden kelp, bitter orange, anise myrtle and a little buckthorn.
The Golden Kelp’s flavour is even more prominent when mixed with tonic water - so this is the perfect G&T gin.
Packing some serious punch at 58% ABV Mutiny is perfect for those who love their Navy Strength gins!

ABOUT FURY The inspiration behind Fury is drawn from 2 different areas. Our Deadly Sin, Wrath (the red one), has always been a favourite for distiller Matt - with its peppery notes and the prickly/tingling sensation through the mouth, a characteristic of the stinging nettles. Matt wanted to kick this sensation up a notch or two in his new creation. Sansho is a peppercorn native to Japan, giving a bright and dry lemon-pepper flavour. After the big juniper hit the Sansho “bite” can be felt in the mouth on the finish, giving a pleasantly tingling sensation, which compliments the feeling of boiling fury. Amongst some classic Wrath botanicals we have added: Native Mountain Pepper Berries Similar in size and appearance to the Black peppercorn, but with a rough texture and deep purple hue. Origin – Tasmania Form – Whole dried Pepper Berry Flavour – General citrus-pepper
Origin – South East Asia Form – Dried peel Flavour – A bitter citrus flavour with a slight sourness Cubeb Pepper About the same size as black peppercorns but they have a little spike or tail, hence their other name ‘tailed pepper”. Origin – Indonesia Form – Whole peppercorn roughly crushed/broken Flavour – Juniper like taste, with a spicy heat and a lavender/clove aroma. Sansho/Sansyo Dried outer casing of the Prickly Ash berry. Origin – Japan Form – Green peppercorn Flavour – The flavour profile is very different. Still tingling and numbing, but more lemon-like and bright in the aroma with floral top notes.

Add Sloe gin to a champagne flute or coupe glass, top with chilled prosecco and enjoy!

Mulled Sloe Gin
You will need -
60ml Sin Gin Sloe Gin
75ml Apple Juice
50ml Water
Cinnamon Stick
Cloves - 3
Half an orange - sliced
Nutmeg - pinch
Method -
Simmer ingredients (minus Sloe Gin) in a saucepan for 20 minutes.
Remove cloves.
Add sloe gin, allow to warm, and serve.
Garnish with an orange slice and cinnamon stick.

Method -
Pour Gluttony, Red Vermouth and Campari into your tumbler and add a large block of ice. Add orange slice. Stir and enjoy!
